Sausage and White Bean Soup

A hearty and delicious crockpot soup. Perfect for warming up during the cold months or serving at a holiday party.

I found this recipe originally on Pinterest. But when I started reading the instructions and it mentioned blending the soup it sounded like too much work for a lazy Sunday. So I made some adjustments and swapped spinach for cabbage and it turned out so amazing. I just had to share will all of you right away! Let me know what you think.

 

Ingredients

  • 2 cans of cannellini beans

  • 1 box of chicken broth

  • 5 strips of bacon

  • 1 TBSP Italian seasoning

  • ½ tbsp red chili flakes

  • 1 lb sweet Italian sausage

  • 3-4 cups of cabbage

  • ½ cup of carrots, sliced thin

  • ½ medium onion

  • Salt

  • Pepper


Recommended Equipment


Directions


1. Cut the bacon into small pieces and brown to your liking.


2. Once the bacon is done, add the onion to the pan and cook to desired liking. Then add the sausage and brown.


3. Once bacon, onions, and sausage are done you may want to drain some of the excess grease.


4. Add chicken broth, beans, carrots, the bacon, onions and sausage to the crockpot. Add all the seasonings and half the cabbage to the crockpot. Mix everything together thoroughly.


5. After the cabbage wilts, you can add the remaining cabbage. Usually about an hour. At this point you can decide if you want more cabbage or if you like the consistency it is currently at. You can really add more at any point if you would like!


6. Cook on high for 4 to 5 hours depending on how done you like your beans and cabbage.


7. Enjoy with garlic bread or just by itself!



 

Notes

You don't have to use bacon or sausage! Try this with any of your favorite meats like turkey or chicken.


You can do a low cook as well. It will double the time but your house will smell amazing all day!


Definitely add parmesan to the top when serving!
