Spicy Sausage Tortellini Soup

Want a mouth watering soup that is a real crowd pleaser and can just sit in the crockpot all day? This one is for you!


I found this recipe about a year ago and have made adjustments to make it the perfect recipe for a slow cooking crockpot recipe. I like mine nice and thick with a little less soupiness. But if you want this to be soupier just read some of my notes below!


Spicy Sausage Tortellini Soup


Ingredients

  • 1 lb. of hot Italian sausage (Hatfield ground)

  • 1 block of cream cheese

  • 3 cups of chicken broth (about ¾ of a 32 oz container)

  • 1 10 oz can of original Rotel diced tomatoes with chilies

  • 4 cups of spinach (as much or little as you please)

  • Family size chicken and mozzarella tortellini

  • ½ TBSP Salt

  • ½ TBSP Pepper

  • Sprinkle of dried Basil

  • ½ TBSP Italian Seasoning

  • ½ TBSP Red chili flakes: put as much or as little as you would like based on how much spice you like

Disclaimer: I do not measure my seasonings so I am taking a guess on the amounts. Measure with your heart!

Recommended Equipment & Ingredients


Directions

  1. Add the chicken broth, cream cheese and can of diced tomatoes to a crockpot. Cook on high for 2 hours or low for 4. Or until the cream cheese is broken apart and mixed well with the broth.

  2. While that is cooking, make small meatballs with the ground sausage. I make mine about the size of a quarter but you can make them as small or big as you would prefer.

  3. Once the broth mixture is ready, pop the meatballs into the crockpot. Cook them for another hour on high or about an hour and a half on low. Add the salt, pepper, basil, Italian seasoning and red chili flakes now.

  4. Once the meatballs are cooked add the spinach and the tortellini to the crockpot. The spinach is going to look like a lot but it will cook down and wilt. Cook for another 45 minutes on high. About an hour on low. You can tell it is done when the tortellini have puffed up and they are touching each other.

  5. Scoop yourself a bowl and add parmesan cheese on top. Enjoy!


Notes:

  • Want to make it extra spicy? Try the hot Rotel canned tomatoes with habaneros.

  • If you want it to be soupier just add more chicken broth.

  • You can use any tortellini but after making this many times my favorite is the chicken and mozzarella
